Cooking Steps

  1. 1. Break the brick tea into small pieces or measure out the loose black tea leaves.
  2. 2. Bring water to a boil in a pot. Add the tea and simmer for 5 minutes, until the liquid darkens in color and becomes fragrant.
  3. 3. Strain the tea and remove the leaves. Return the tea liquid to the pot.
  4. 4. Add fresh milk and salt. Stir well and bring to a simmer. Do not let it boil violently.
  5. 5. Add butter and toasted millet, if using. Stir until butter is completely melted.
  6. 6. Pour into a bowl and enjoy while hot. Traditionally served with fried dough or cheese.
