Cooking Steps

  1. 1. Clean the sheep intestines thoroughly: Turn the sheep intestines over, rub them with salt and flour, and rinse them several times until they are completely clean and have no odor.
  2. 2. Boil the intestines in water with ginger and cooking wine for 20 minutes until soft. Drain the water and cut into 3cm pieces.
  3. 3. Pour oil into the pot and heat until smoking. Add dried chilies and Sichuan peppercorns and stir-fry slightly until fragrant.
  4. 4. Add ginger, garlic and scallions. Sauté for 30 seconds until fragrant.
  5. 5. Add intestines, soy sauce and cooking wine. Sauté over high heat for 3-4 minutes.
  6. 6. Sprinkle with cumin and white pepper. Mix well and serve immediately with steamed buns.
