Ankang Fried Rice Noodles
Ānkāng Chǎo Mǐxiàn is a stir-fried rice noodle dish from Ankang, in southern Shaanxi. The dish features thick rice noodles wok-tossed with eggs, vegetables, and a savory sauce. Ankang's location in the Qinling Mountains gives it a cuisine that blends northern and southern Chinese elements.

- 250 g fresh thick rice noodles
- 2 eggs (beaten)
- 100 g cabbage (shredded)
- 50 g bean sprouts
- 2 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tsp dark soy sauce
- 1 tsp sugar
- 1 tbsp chili oil (optional)
制作步骤
- 1. Wash and cut the Ankang fried rice noodles, marinate with salt and cooking wine for 10 minutes
- 2. Coat with dry starch or batter
- 3. Pour enough oil into the pot and heat until 60% hot
- 4. Add Ankang fried rice noodles piece by piece and fry over medium heat until golden brown and take out.
- 5. Increase the oil temperature to 80% and fry again for 30 seconds until crispy.
- 6. Remove and drain the oil, then serve on a plate
