  1. 1. Knead flour and warm water into a soft dough and let it rise for 20 minutes.
  2. 2. Divide the dough into strips and roll it into a thin round dough.
  3. 3. Sprinkle green pepper, coriander and a little salt on the dough
  4. 4. Roll up the dough and flatten it into a cake shape
  5. 5. Brush the pan with thin oil and fry over medium-low heat until one side is golden brown, flip over
  6. 6. Fry both sides until golden and crispy, remove from the pan and cut into pieces.

Roujiamo is widely considered one of the oldest sandwich-type foods in the world, with origins in the Qin dynasty over 2,200 years ago. The Shaanxi version is the original and most authentic. The baiji mo is made from a simple wheat dough that is baked in a clay oven called a "hu" until it develops a golden, flaky crust. The contrast between the crispy bread and the soft, juicy braised pork is the essence of this dish. In Xi an, roujiamo shops are found on nearly every street corner, and each shop claims their own secret recipe. The dish was listed as a provincial intangible cultural heritage in 2016.
