Knife noodles
Dāoxiāomiàn (Knife-Cut Noodles) is a famous Shaanxi noodle dish. Skilled cooks hold a block of dough in one hand and rapidly shave off noodle strips directly into boiling water using a special curved knife. The noodles have a distinctive irregular shape with a thin middle and thicker edges, giving them a unique chewy texture.
