Xianyang Guokui
Xiányáng Guōkuī is a large, thick flatbread from Xianyang, near Xi'an. The bread is made from a simple dough of flour, water, and salt, then baked until it develops a hard, crispy exterior and a soft, chewy interior. It is traditionally carried by travelers and workers as a durable, long-lasting food.

- Dough: 500 g flour, 200 ml warm water, 5 g salt
- Seasoning: 1 tbsp five-spice powder (optional)
- A little oil for coating
制作步骤
- 1. Cut the pork filling into thin slices or small pieces, add cooking wine and a little soy sauce and marinate for 15 minutes
- 2. Pour an appropriate amount of cooking oil into the pot and heat it over high heat until it is 70% hot.
- 3. Add the pork stuffing and stir-fry quickly over high heat until it changes color.
- 4. Add onion, ginger and garlic and continue to stir-fry until cooked through
- 5. Add salt, soy sauce and cooking wine to taste, stir-fry over high heat and serve evenly.
- 6. Remove from the pan and serve on a plate
