Yan'an oil cake
Yán'ān Yóugāo (Yan'an Fried Cake) is a traditional pastry from Yan'an, the famous revolutionary base. Made from glutinous rice flour filled with sweet red bean or jujube paste, these cakes are deep-fried until golden with a crispy exterior and a soft, sticky interior. They are a beloved festival food in northern Shaanxi.

- Dough: 250 g glutinous rice flour, 180 ml warm water
- Filling: 150 g red bean paste or jujube paste
- Oil for deep frying
- Sesame seeds for coating (optional)
制作步骤
- 1. Wash and cut Yan'an oil cake, marinate with salt and cooking wine for 10 minutes
- 2. Coat with dry starch or batter
- 3. Pour enough oil into the pot and heat until 60% hot
- 4. Add Yan'an oil cake piece by piece and fry over medium heat until golden brown and take out.
- 5. Increase the oil temperature to 80% and fry again for 30 seconds until crispy.
- 6. Remove and drain the oil, then serve on a plate

Yan'an fried cakes are deeply tied to the region's revolutionary history. During the Yan'an period (1935-1948), these cakes were a common food for soldiers and local people. Today, they are a nostalgic food that represents the spirit of Yan'an. They are especially popular during the Spring Festival and are given as gifts. The cakes symbolize reunion and prosperity.
