This Dongbei adaptation of Russian borscht combines beef, cabbage, potatoes, and tomatoes into a hearty, slightly sweet-and-sour soup. Introduced by Russian immigrants to Harbin in the early 20th century, it has become a beloved Dongbei household staple.

  1. 1. Wash and process the beef
  2. 2. Add enough water to the pot, add Northeastern borscht and ginger slices
  3. 3. After the fire is boiled, skim off the foam.
  4. 4. Add Northeastern borscht, water, ginger slices and green onions and simmer over low heat for 1 hour.
  5. 5. Add salt to taste
  6. 6. Serve in a bowl and sprinkle with chopped green onion.
