Sixi meatballs
Sìxǐ Wánzǐ (Four Happiness Meatballs) is a classic Shandong festive dish. Four large, golden-brown meatballs are braised in a rich, savory sauce with bok choy. The name represents the four blessings: happiness, prosperity, longevity, and joy. It is a staple at Chinese New Year celebrations and wedding banquets.
食材清单
- 600 g minced pork (70% lean, 30% fat)
- 100 g water chestnuts (finely chopped)
- 2 eggs
- 3 tbsp cornstarch
- 2 tbsp light soy sauce
- 1 tbsp sesame oil
- 1 tsp white pepper
- 1 tsp salt
- 2 slices ginger (minced)
- 4 bok choy
- Sauce: 300 ml chicken stock
- Sauce: 2 tbsp light soy sauce
- Sauce: 1 tbsp dark soy sauce
- Sauce: 1 tbsp sugar
- Sauce: 1 tbsp cornstarch slurry
- Vegetable oil for frying
制作步骤
- 1. Cut the pork filling into thin slices or small pieces, add cooking wine and a little soy sauce and marinate for 15 minutes
- 2. Pour an appropriate amount of cooking oil into the pot and heat it over high heat until it is 70% hot.
- 3. Add the pork stuffing and stir-fry quickly over high heat until it changes color.
- 4. Add onions, ginger, and rapeseed and continue to stir-fry until cooked through
- 5. Add soy sauce, cooking wine, rock sugar, and star anise to taste, stir-fry over high heat and remove from the pan
- 6. Remove from the pan and serve on a plate
