Heze mutton soup
Hézé Yángròu Tāng (Heze Mutton Soup) is a legendary mutton soup from Heze, Shandong, often called 'the first soup of China.' Made by slow-simmering goat or mutton bones for hours, the resulting broth is milky white, incredibly rich, and deeply flavorful. It is typically served with flatbread and eaten for breakfast.

- 1 kg goat or mutton bones (with some meat)
- 3L water
- 5 slices ginger
- 3 scallions (tied in a knot)
- 2 tbsp cooking wine
- 1 tsp white pepper
- Salt to taste
- Serving: flatbread (guokui), cilantro, chili oil
制作步骤
- 1. Wash and process the mutton.
- 2. Add enough water to the pot, add Heze mutton soup and ginger slices
- 3. After the fire is boiled, skim off the foam.
- 4. Add mutton, water, ginger slices and green onions and simmer over low heat for 1 hour
- 5. Add salt to taste
- 6. Serve in a bowl and sprinkle with chopped green onion.
