Heze mutton soup
Ingredients
- 1 kg goat or mutton bones (with some meat)
- 3L water
- 5 slices ginger
- 3 scallions (tied in a knot)
- 2 tbsp cooking wine
- 1 tsp white pepper
- Salt to taste
- Serving: flatbread (guokui), cilantro, chili oil

- Wash and process the mutton.
