Jiuzhuan Dachang (Nine-Turn Intestines) is a classic dish of Lu cuisine, made with pork intestines through multiple cooking steps including blanching, boiling, deep-frying, and braising. The intestines become meltingly tender and flavorful, with rich, layered textures. Combining all five flavors — sour, sweet, fragrant, spicy, and salty — it is the grand finale dish at Lu cuisine banquets.

制作步骤

  1. 将猪肠翻过来,清洗干净,用面粉和醋反复揉搓,去除腥味。
  2. 冷水下锅,将水烧开,加入葱、姜、料酒去除腥味。
  3. 取出,切成3厘米长的段
  4. 锅内放油,将大肠煎至表面微焦
  5. 锅里留少许油,加入葱、姜炒香
  6. 加入酱油、醋、糖、料酒和适量水
  7. 加入大肠段,小火煮40分钟直至变软。
  8. 用大火收汁,撒上砂仁粉、肉桂粉、胡椒粉和香菜。

文化小知识

九转大肠创于清光绪初年,由济南九华楼宾馆首创。据说制作此菜需经过九道工序,犹如炼丹的“九转”,故名。此菜是鲁菜中最复杂的菜肴之一,体现了鲁菜厨师精湛的烹饪技艺。
