Linyi glutinous rice soup
Línyí Sā Tāng (Linyi Sa Soup) is a traditional breakfast soup from Linyi, Shandong. The soup is made from chicken or beef broth thickened with flour, creating a silky, rich consistency. It is seasoned with black pepper, which gives it a distinctive warming heat. Despite its simplicity, sa soup is one of Linyi's most iconic dishes.
食材清单
- 1 whole chicken (or 500 g beef shank)
- 3L water
- 5 slices ginger
- 2 scallions
- Thickening: 100 g flour, 100 ml water (mixed to slurry)
- Seasoning: 2 tbsp white pepper, salt to taste
- 1 tbsp sesame oil
- Garnish: cilantro, scallion greens
制作步骤
- 1. Wash and process the fried chicken.
- 2. Add enough water to the pot, add Linyi glutinous rice soup and ginger slices
- 3. After the fire is boiled, skim off the foam.
- 4. Add Linyi glutinous rice soup, water, ginger slices, green onions and simmer over low heat for 1 hour
- 5. Add salt to taste
- 6. Serve in a bowl and sprinkle with chopped green onion.
