Eight Treasure Duck
Bābǎo Yā (Eight Treasure Duck) is an elaborate Shanghai banquet dish. A whole duck is deboned, stuffed with eight precious ingredients — glutinous rice, lotus seeds, Chinese sausage, dried shrimp, mushrooms, chestnuts, pork, and bamboo shoots — then braised until the duck is meltingly tender.
食材清单
- 1 whole duck (about 2 kg)
- Stuffing: 150 g glutinous rice (soaked)
- Stuffing: 50 g lotus seeds
- Stuffing: 50 g Chinese sausage (diced)
- Stuffing: 30 g dried shrimp
- Stuffing: 50 g dried mushrooms (soaked, diced)
- Stuffing: 50 g water chestnuts
- Stuffing: 50 g pork (diced)
- Stuffing: 30 g bamboo shoots (diced)
- Stuffing: 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp sugar
- Braising: 2 tbsp light soy sauce, 1 tbsp dark soy sauce, 500 ml stock, ginger, scallions, 1 star anise
制作步骤
- 1. Wash and cut the duck into pieces, add cooking wine and a little soy sauce and marinate for 15 minutes
- 2. Pour an appropriate amount of cooking oil into the pot and heat it over high heat until it is 70% hot.
- 3. Add the duck and stir-fry quickly over high heat until it changes color.
- 4. Add red beans and continue to stir-fry until cooked
- 5. Add appropriate amount of salt and a little soy sauce to enhance the freshness, stir-fry over high heat and serve evenly.
- 6. Remove from the pan and serve on a plate
