Shanghai fish head and tofu soup
Shànghǎi Yútóu Dòufu Tāng (Shanghai Fish Head Tofu Soup) is a comforting, nourishing soup made from fish heads slowly simmered with soft tofu and white radish. The broth becomes milky white and deeply savory, while the tofu absorbs the fish's sweetness. It is a beloved home-style soup throughout Shanghai.
食材清单
- 1 large fish head (carp or sea bass, about 500 g)
- 300 g soft tofu (cut into cubes)
- 100 g white radish (sliced)
- 3 slices ginger
- 2 scallions
- 1 tbsp Shaoxing wine
- 1 tbsp vegetable oil
- 1 tsp salt, white pepper to taste
- 1.5L water
制作步骤
- 1. Wash and clean the fish head
- 2. Add enough water to the pot, add Shanghai fish head tofu soup and ginger slices
- 3. After the fire is boiled, skim off the foam.
- 4. Add tofu, water, ginger slices and scallions and simmer over low heat for 1 hour
- 5. Add salt to taste
- 6. Serve in a bowl and sprinkle with chopped green onion.
