Shanghai Sixi Baked Gluten
Shànghǎi Sìxǐ Kǎofū (Shanghai Four-Joy Roasted Wheat Gluten) is a classic Shanghai cold dish and vegetarian staple. Wheat gluten (kaofu) is braised with wood ear mushrooms, bamboo shoots, peanuts, and daylily buds in a sweet-savory soy sauce. The four ingredients symbolize happiness, wealth, longevity, and joy.
食材清单
- 200 g wheat gluten (kaofu, torn into pieces)
- 50 g wood ear mushrooms (soaked)
- 50 g bamboo shoots (julienned)
- 50 g peanuts (soaked and boiled)
- 30 g dried daylily buds (soaked)
- 3 tbsp soy sauce
- 2 tbsp sugar
- 1 tbsp dark soy sauce
- 1 tbsp sesame oil
- 1 tbsp vegetable oil, 1 tsp ginger
制作步骤
- 1. Wash and process the roasted bran, marinate with seasonings for 30 minutes
- 2. Line a baking sheet with tin foil and put in Shanghai Sixi Baked Gluten
- 3. Preheat the oven to 200 degrees
- 4. Place in the middle rack of the oven and bake for 20-25 minutes
- 5. Take it out halfway and brush it with a layer of marinade.
- 6. Bake until the surface is golden brown and then take it out of the oven
