Sichuan spicy chicken (Laziji) features bite-sized chicken pieces deep-fried until crispy, then tossed with a mountain of dried red chilies and Sichuan peppercorns.

  1. 1. Heat oil in a pot and stir-fry the dried chili pepper and Sichuan peppercorns over low heat until fragrant.
  2. 2. Add Sichuan spicy chicken and stir-fry over high heat until it changes color.
  3. 3. Add chicken thighs, green onions, ginger, and white sesame seeds and stir-fry evenly
  4. 4. Add bean paste, soy sauce, and sugar and stir-fry until red oil appears.
  5. 5. Pour in a little peppercorn oil and vinegar and stir-fry evenly
  6. 6. Remove from the pan and serve on a plate, sprinkle with chopped green onion and serve

文化小知识

Laziji originated in Chongqing (gezibe, near Jiangbei) and is now a staple of Sichuan-Chongqing cuisine. The dish is famous for its intimidating appearance — a mountain of dried chilies with chicken pieces buried within — but the heat level is actually moderate because the chilies are used more for flavor than raw heat. The joy of this dish is "hunting for the chicken" among the chilies. The crispy chicken, fragrant chili oil, and numbing Sichuan peppercorns create an addictive combination.
