Sīwáwa (Silk Dolls) is a beloved Guiyang street food. Thin, crepe-like wrappers are filled with a colorful assortment of shredded vegetables, vermicelli, and herbs, then folded into small bundles resembling swaddled babies. They are dipped in a tangy Guizhou-style sour sauce before eating.

Ingredients
- Wrappers: 100 g flour (mixed with water to thin batter)
- Fillings: shredded cucumber
- Fillings: shredded carrot
- Fillings: shredded radish
- Fillings: bean sprouts
- Fillings: shredded celery
- Fillings: vermicelli (blanched)
- Fillings: chopped cilantro
- Fillings: crushed peanuts
- Sauce: 2 tbsp soy sauce
- Sauce: 1 tbsp black vinegar
- Sauce: 1 tbsp chili oil
- Sauce: 1 tbsp sesame oil
- Sauce: 1/2 tsp sugar
Instructions
- 1. 面粉加水调成稀面糊,在平底锅中摊成薄饼皮
- 2. 各种蔬菜切成细丝:黄瓜丝、胡萝卜丝、豆芽、海带丝等
- 3. 取一张薄饼皮,放上各种蔬菜丝
- 4. 浇上酸辣蘸水(酱油、醋、辣椒油、花椒油等调制)
- 5. 将饼皮包卷起来,收口朝下
- 6. 整个放入口中一口吃下
Cultural Notes
Silkworm babies (sīwáwa) are a quintessential Guiyang street snack, found at nearly every night market and snack stall. The name comes from the wrapper resembling a baby swaddled in silk.
