Dong'an Chicken
Ingredients
- Dong'an Chicken 300g
- Appropriate amount of cooking oil
- Salt as appropriate
- 1 tablespoon soy sauce
- Cooking wine 1 spoon
- Onion, ginger and garlic appropriate amount
Cooking Steps
- 1. Cut chicken into pieces, add white vinegar and salt and marinate for 30 minutes
- 2. Heat oil in a pan, add chicken pieces and fry until both sides are slightly brown.
- 3. Add shredded ginger, dried chili pepper, and Sichuan peppercorns and stir-fry until fragrant
- 4. Pour in the chicken stock and bring to a boil, then simmer over low heat for 20 minutes.
- 5. Add vinegar, sugar and salt to taste
- 6. Reduce the juice over high heat, sprinkle with chopped green onion and serve.
