嘉积鸭

Jiājī Yā is one of Hainan's four famous dishes. These ducks are raised in Qionghai's Jiaji town using a special method — force-fed with rice bran, peanuts, and sweet potatoes. The result is a duck with thin skin, tender meat, and minimal fat. It is typically served white-cut (bai qie) style with ginger and plum sauce.

  1. 1. 鸭洗净切块,加料酒和少许酱油腌制15分钟
  2. 2. 锅中倒入适量食用油,大火烧至七成热

  5. 5. 加入盐、酱油、料酒调味,大火翻炒均匀出锅
