Zhejiang Beggar Chicken
Ingredients
- 1 whole free-range chicken (about 1.2 kg)
- Marinade: 2 tbsp Shaoxing wine
- Marinade: 1 tbsp soy sauce
- Marinade: 1 tbsp sugar
- Marinade: 2 slices ginger
- Marinade: 3 cloves garlic
- Filling: 50 g pork fat (diced)
- Filling: 50 g mushrooms (soaked, diced)
- Filling: 50 g ham (diced)
- Filling: 1 tbsp soy sauce
- Wrapping: 4-6 large lotus leaves (soaked)
- Sealing: non-toxic clay or salt dough
Instructions
- Marinate the chicken with wine, soy sauce, sugar, ginger, and garlic for at least 2 hours.
