Ingredients

  • Tilapia 1 (about 500g, cleaned)
  • Tofu 200g (cubed)
  • Ginger 15g (sliced)
  • Scallions 3
  • Garlic 3 cloves (sliced)
  • Light soy sauce 1 tbsp
  • Shaoxing wine 1 tbsp
  • White pepper 1/4 tsp
  • Salt 1/2 tsp
  • Cooking oil 2 tbsp
  • Water 800ml

Instructions

  1. 1. Clean tilapia. Cut into thick slices.
  2. 2. Heat oil. Pan-fry fish slices until lightly golden on both sides.
  3. 3. Add ginger, garlic and scallion whites.
  4. 4. Add Shaoxing wine and hot water.
  5. 5. Bring to boil. Reduce heat. Simmer 15 minutes.
  6. 6. Add tofu cubes.
  7. 7. Simmer 10 more minutes until soup is milky white.
  8. 8. Season with soy sauce, salt and white pepper.
  9. 9. Garnish with scallion greens. Serve hot.
