Jinhua Duck
Jīnhuá Yā (Jinhua Duck) is a traditional braised duck dish from Jinhua, Zhejiang. A whole duck is slowly braised in a rich soy sauce-based broth with local spices until the meat is fall-off-the-bone tender and deeply flavored. The dish is a celebration of Jinhua's renowned food culture.

- 1 whole duck (about 1.5 kg)
- 3 tbsp soy sauce
- 2 tbsp dark soy sauce
- 2 tbsp Shaoxing wine
- 3 slices ginger
- 3 scallions
- 1 star anise
- 2 tsp sugar
- 1 tsp five-spice powder
- Water to cover
制作步骤
- Clean duck thoroughly. Blanch in boiling water for 5 minutes. Rinse.
- Place duck in a large pot with all ingredients except dark soy sauce.
- Add water to cover the duck. Bring to a boil.
- Reduce heat and simmer gently for 1.5-2 hours, turning occasionally.
- Add dark soy sauce in the last 30 minutes for color. Serve cut into pieces.
