Jinyun Shaobing
Jìnyún Shāobǐng (Jinyun Baked Pancake) is a famous street food from Jinyun County in Zhejiang. These small, round flatbreads are stuffed with seasoned minced pork and scallions, then baked in a clay oven until golden and crispy. They are savory, flaky, and incredibly aromatic.

制作步骤
- Mix flour, water, and salt into a dough. Knead until smooth. Rest 30 minutes.

- Place filling in center, gather edges, and pinch to seal. Flatten into a disc.
- Brush with water, press sesame seeds on top. Bake in a clay oven at 250°C for 8-10 minutes until golden.

Jinyun baked pancakes have a history of over 650 years, originating in the Yuan Dynasty. The dish is so iconic that Jinyun County has been declared the 'Hometown of Shaobing.'
