Wenzhou Lean Meat Balls

Ingredients
- Pork tenderloin 300g (minced)
- Sweet potato starch 30g
- Scallions 3 (minced)
- Ginger 5g (minced)
- Salt 1/2 tsp
- White pepper 1/4 tsp
- Light soy sauce 1 tsp
- Water 3 tbsp
Instructions
- 1. Mince pork tenderloin very finely.
- 2. Add sweet potato starch, scallions and ginger.
- 3. Season with salt, pepper and soy sauce.
- 4. Add water gradually. Stir in one direction until sticky.
- 5. Bring water to boil. Wet hands and form meat balls.
- 6. Drop gently into boiling water.
- 7. Cook until they float, about 4 minutes.
- 8. Serve in clear soup or with a light soy dipping sauce.
