Zhenjiang Crystal Meat
Instructions
- 1. Rub the pig's trotters thoroughly with coarse salt and Sichuan peppercorns.
- 2. Curing in refrigerator for 24 hours.
- 3. Rinse off excess salt.
- 4. Add ginger, green onions, Shaoxing wine and water to the pot.
- 5. Bring to boil. Reduce heat.
- 6. Simmer gently 2 hours until very tender.
- 7. Remove from pot. Cool completely.
- 8. Cut into thin slices. The meat should have a translucent, crystal-like appearance. Serve cold with vinegar.
