Instructions

  1. 1. Rub the pig's trotters thoroughly with coarse salt and Sichuan peppercorns.
  2. 2. Curing in refrigerator for 24 hours.
  3. 3. Rinse off excess salt.
  4. 4. Add ginger, green onions, Shaoxing wine and water to the pot.
  5. 5. Bring to boil. Reduce heat.
  6. 6. Simmer gently 2 hours until very tender.
  7. 7. Remove from pot. Cool completely.
  8. 8. Cut into thin slices. The meat should have a translucent, crystal-like appearance. Serve cold with vinegar.
