Putian Pan-fried Buns
Pútián Jiānbāo are pan-fried buns from Putian, Fujian. These fluffy buns are filled with a savory mixture of pork and scallions, then pan-fried until the bottom is deeply golden and crispy while the top remains soft and white. They are a beloved Putian breakfast staple.

- Dough: 300 g all-purpose flour
- Dough: 5 g yeast
- Dough: 160 ml warm water
- Filling: 200 g minced pork
- Filling: 100 g scallions (chopped)
- Filling: 1 tbsp soy sauce
- Filling: 1 tbsp oyster sauce
- Filling: 1 tbsp sesame oil
- Filling: 1/2 tsp white pepper
- Filling: 1 tsp sugar
- 2 tbsp vegetable oil
制作步骤
- 1. Wash and cut the Putian pan-fried buns, marinate with salt and cooking wine for 10 minutes
- 2. Coat with dry starch or batter
- 3. Pour enough oil into the pot and heat until 60% hot
- 4. Add Putian pan-fried buns piece by piece and fry over medium heat until golden brown and take out.
- 5. Increase the oil temperature to 80% and fry again for 30 seconds until crispy.
- 6. Remove and drain the oil, then serve on a plate
