Hechi crispy chicken
Héchí Cuìpí Jī (Hechi Crispy Skin Chicken) is a celebrated dish from Hechi, Guangxi. The chicken is marinated with a blend of local spices, then roasted at high heat until the skin is shatteringly crisp while the meat remains juicy and aromatic. It is a must-try dish at Hechi banquets and celebrations.
食材清单
- 1 whole free-range chicken (about 1.5 kg)
- Marinade: 3 tbsp soy sauce
- Marinade: 2 tbsp Shaoxing wine
- Marinade: 1 tbsp five-spice powder
- Marinade: 2 slices ginger, 3 cloves garlic
- Marinade: 1 tsp sugar, 1 tsp salt
- Glaze: 2 tbsp maltose or honey, 1 tbsp hot water
- 1 tbsp white vinegar
制作步骤
- 1. Wash and cut the Hechi crispy chicken, marinate with salt and cooking wine for 10 minutes
- 2. Coat with dry starch or batter
- 3. Pour enough oil into the pot and heat until 60% hot
- 4. Add Hechi Crispy Chicken piece by piece and fry over medium heat until golden brown and take out.
- 5. Increase the oil temperature to 80% and fry again for 30 seconds until crispy.
- 6. Remove and drain the oil, then serve on a plate
