Lemon Duck
Níngméng Yā is a signature dish from Nanning, Guangxi. Duck is stir-fried with pickled lemons (ningmeng yan), sour plums, garlic, and chili. The pickled lemons give the dish a unique tangy, aromatic quality that cuts through the richness of the duck meat. It is considered one of Guangxi's most iconic dishes.

- 1 duck (about 1.5 kg, cut into pieces)
- 3 pickled lemons (ningmeng yan)
- 2 sour plums
- 4 cloves garlic (crushed)
- 3 chili peppers
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sugar
- 1 tbsp Shaoxing wine
- 3 tbsp vegetable oil
制作步骤
- 1. Wash and cut the duck into pieces, add cooking wine and a little soy sauce and marinate for 15 minutes
- 2. Pour an appropriate amount of cooking oil into the pot and heat it over high heat until it is 70% hot.
- 3. Add the duck and stir-fry quickly over high heat until it changes color.
- 4. Add onion, ginger and garlic and continue to stir-fry until cooked through
- 5. Add rock sugar, salt, soy sauce and cooking wine to taste, stir-fry over high heat and serve evenly.
- 6. Remove from the pan and serve on a plate
