Ingredients

  • Fresh oysters 200g
  • Eggs 4 (beaten)
  • Sweet potato starch 2 tbsp
  • All-purpose flour 1 tbsp
  • Scallions 3 (chopped)
  • Coriander 2 sprigs
  • Fish sauce 1 tsp
  • White pepper 1/4 tsp
  • Cooking oil 3 tbsp

Instructions

  1. 1. Shuck oysters. Rinse and drain.
  2. 2. Mix eggs with sweet potato starch, flour and fish sauce.
  3. 3. Add scallions and coriander.
  4. 4. Heat oil in pan until very hot.
  5. 5. Pour in egg mixture. Spread evenly.
  6. 6. Scatter oysters on top.
  7. 7. Cook 2-3 minutes until bottom is crispy and eggs are set.
  8. 8. Flip or fold. Serve with sweet chili sauce.
