Guangxi Oyster Omelette
Instructions
- 1.Shuck the oysters. Rinse and drain.
- 2. Mix eggs with sweet potato starch, flour and fish sauce.
- 3. Add green onions and coriander.
- 4. Heat oil in pan until very hot.
- 5. Pour in egg mixture. Spread evenly.
- 6. Scatter oysters on top.
- 7. Cook for 2-3 minutes, until the bottom is crispy and the eggs are set.
- 8. Flip or fold. Serve with sweet chili sauce.
