Instructions

  1. 1.Shuck the oysters. Rinse and drain.
  2. 2. Mix eggs with sweet potato starch, flour and fish sauce.
  3. 3. Add green onions and coriander.
  4. 4. Heat oil in pan until very hot.
  5. 5. Pour in egg mixture. Spread evenly.
  6. 6. Scatter oysters on top.
  7. 7. Cook for 2-3 minutes, until the bottom is crispy and the eggs are set.
  8. 8. Flip or fold. Serve with sweet chili sauce.
