Siwawa (silk doll) is a beloved Guiyang street snack. Thin crepe-like wrappers are filled with colorful chopped vegetables, vermicelli and herbs, then folded into bundles and dipped in rich sour sauce.

Siwawa is a typical Guiyang street snack found in almost every night market and food stall. The name comes from the wrapping, which resembles a baby wrapped in silk. Ingredients
- Wrappers: 100 g flour (mixed with water to thin batter)
- Fillings: shredded cucumber
- Fillings: shredded carrot
- Fillings: shredded radish
- Fillings: bean sprouts
- Fillings: shredded celery
- Fillings: vermicelli (blanched)
- Fillings: chopped cilantro
- Fillings: crushed peanuts
- Sauce: 2 tbsp soy sauce
- Sauce: 1 tbsp black vinegar

- Sauce: 1/2 tsp sugar
Instructions
- Add flour and water to make a thin batter, spread it into a thin pancake crust in a pan
- Cut various vegetables into thin strips: cucumber shreds, carrot shreds, bean sprouts, kelp shreds, etc.
- Take a piece of pancake skin and put various shredded vegetables on it
- Pour in hot and sour dipping water (prepared with soy sauce, vinegar, chili oil, Sichuan pepper oil, etc. )
- Roll up the pastry bag with the seam facing down
