Zunyi Chicken Cake
Zūnyì Jīdàn Gāo (Zunyi Egg Cake) is a famous traditional pastry from Zunyi, Guizhou. Made primarily from eggs, sugar, and flour, the cake has a distinctive golden color, fluffy texture, and rich egg flavor. It has been produced for over 70 years and is one of Zunyi's most iconic food products.
Ingredients
- 200 g eggs (about 4 large eggs)
- 150 g sugar
- 120 g cake flour
- 1 tsp vanilla extract
- 20 g butter (melted, optional)
Instructions
- 1. Crack the eggs into a bowl, add a little salt and stir well and set aside.
- 2. Heat oil in a pot, add onion, ginger and garlic and stir-fry until fragrant
- 3. Add the eggs and stir-fry quickly over high heat until they change color.
- 4. Add salt and soy sauce to taste, stir-fry over high heat and serve evenly.
Cultural Notes
Zunyi egg cake has been produced since the 1930s and is a recognized intangible cultural heritage product. The cake's fame is partly tied to Zunyi's historical significance — the city was the site of the famous Zunyi Conference during the Long March. The cake is a popular souvenir and gift, representing Guizhou's culinary craftsmanship.
