Ding'an Duck
Ingredients
- 1 whole Ding'an duck (about 1.5 kg)
- Poaching broth: 3L water
- Poaching broth: 6 slices ginger, 5 cloves garlic
- Poaching broth: 3 tbsp soy sauce, 2 tbsp cooking wine
- Poaching broth: 1 star anise, 1 tbsp sugar
- Dipping sauce: 50 g minced ginger
- Dipping sauce: 30 g minced scallop
- Dipping sauce: 2 tbsp hot oil, 1 tbsp soy sauce, pinch of salt
Instructions
- Wash and cut the duck into pieces, add cooking wine and a little soy sauce and marinate for 15 minutes
