Ding'an Duck
Dìng'ān Yā (Ding'an Duck) is a famous dish from Ding'an County, Hainan, using the local Ding'an breed of duck. The duck is first simmered in a fragrant broth of ginger, garlic, and local spices, then quickly chilled and served with a ginger-scallion dipping sauce. The result is tender, flavorful meat with silky skin.

- 1 whole Ding'an duck (about 1.5 kg)
- Poaching broth: 3L water
- Poaching broth: 6 slices ginger, 5 cloves garlic
- Poaching broth: 3 tbsp soy sauce, 2 tbsp cooking wine
- Poaching broth: 1 star anise, 1 tbsp sugar
- Dipping sauce: 50 g minced ginger
- Dipping sauce: 30 g minced scallion
- Dipping sauce: 2 tbsp hot oil, 1 tbsp soy sauce, pinch of salt
制作步骤
- 1. Wash and cut the duck into pieces, add cooking wine and a little soy sauce and marinate for 15 minutes
- 2. Pour an appropriate amount of cooking oil into the pot and heat it over high heat until it is 70% hot.
- 3. Add the duck and stir-fry quickly over high heat until it changes color.
- 4. Add onion, ginger and garlic and continue to stir-fry until cooked through
- 5. Add salt, soy sauce and cooking wine to taste, stir-fry over high heat and serve evenly.
- 6. Remove from the pan and serve on a plate
