Lingao roast suckling pig
Língāo Kǎo Rǔzhū (Lingao Roast Suckling Pig) is one of Hainan's most celebrated dishes. Young piglets are marinated with local spices and roasted whole over charcoal until the skin is thin, crisp, and crackling while the meat remains incredibly tender and juicy. It is a highlight of any Hainanese feast.
食材清单
- 1 whole suckling pig (about 5-8 kg)
- Marinade: 3 tbsp five-spice powder
- Marinade: 2 tbsp soy sauce, 2 tbsp cooking wine
- Marinade: 1 tbsp fermented tofu, 2 tbsp sugar
- Marinade: 4 slices ginger, 4 cloves garlic
- Glaze: 2 tbsp maltose, 1 tbsp vinegar, 1 tbsp water
制作步骤
- 1. Wash the suckling pig, marinate it with seasonings for 30 minutes
- 2. Line a baking sheet with tin foil and add Lingao Roast Suckling Pig
- 3. Preheat the oven to 200 degrees
- 4. Place in the middle rack of the oven and bake for 20-25 minutes
- 5. Take it out halfway and brush it with a layer of marinade.
- 6. Bake until the surface is golden brown and then take it out of the oven
