Hainan Chicken Rice
Ingredients
- 1 whole Wenchang chicken (about 1.2 kg)
- Rice: 300 g jasmine rice
- Rice: 3 tbsp rendered chicken fat
- Rice: 3 cloves garlic (minced)
- Rice: 1 inch pandan leaf (optional)
- Rice: 400 ml chicken stock (from poaching)
- Ginger paste: 3 tbsp grated old ginger, 1/2 tsp salt, 1 tbsp sesame oil
- Chili sauce: 5 red chilies, 3 tbsp vinegar, 1 tbsp sugar, 1 tsp salt
- Dark soy: 2 tbsp dark soy sauce, 1 tbsp sugar
- Chicken broth
- Cucumber slices
- Cilantro
Instructions
- Wash the rice 2-3 times, add appropriate amount of water and soak for 30 minutes.
