Lingshui acid powder
Língshuǐ Suānfěn is a signature noodle dish from Lingshui county, Hainan. Thin rice noodles are topped with fried fish cakes, shredded beef, peanuts, and a signature sour-sweet fish sauce made from locally caught fish. The unique sauce, which uses fermented fish, gives this dish a flavor found nowhere else.

- 200 g thin rice noodles
- 50 g fried fish cake (cut into strips)
- 50 g shredded beef
- 30 g roasted peanuts
- 20 g pickled radish
- Bean sprouts
- Cilantro
- Sour-sweet fish sauce: 100 ml fish stock
- Sauce: 2 tbsp sugar
- Sauce: 1 tbsp black vinegar
- Sauce: 1 tbsp garlic oil
- Chili sauce
制作步骤
- 1. Add flour and water and mix into a smooth dough, let it rest for 30 minutes
- 2. Roll the dough into thin sheets and cut into desired shapes
- 3. Prepare side dishes and condiments
- 4. Boil water in a pot, add pasta and cook until cooked, take out
- 5. Mix the pasta and side dish seasonings evenly
- 6. Plate and serve
