Cultural Notes

Xiangyang, an ancient city in northwestern Hubei with a history spanning over 2,800 years, has its own distinctive noodle culture. Xiangyang beef noodles are different from the famous Lanzhou version — the broth is spicier, the beef is braised to tenderness rather than sliced thin, and the noodles are typically thicker and chewier.
