Wuhan pearl meatballs are steamed pork meatballs coated in glutinous rice, which puffs up to look like shiny pearls after steaming. A classic Hubei banquet dish.

  1. 1. Wash the ribs and marinate them with salt and cooking wine for 15 minutes.
  2. 2. Arrange Wuhan Pearl Meatballs on a plate, top with Wuhan Pearl Meatballs, water, ginger slices, and green onions.
  3. 3. Add water to the steamer and bring to a boil, then add the steaming tray
  4. 4. Steam over high heat for 15-20 minutes until cooked through
  5. 5. Take out and pour out the excess soup in the plate.
  6. 6. Pour in hot oil and steamed fish soy sauce and serve

Cultural Notes

Pearl meatballs are a signature dish of Hubei cuisine and a staple at banquets and celebrations. The dish originated in Wuhan and has been served for over a century. The visual appeal of the puffed glutinous rice resembling pearls gives the dish its elegant name. The combination of tender pork, crunchy water chestnuts, and sticky rice creates a delightful texture contrast. This dish is often served at weddings, New Year celebrations, and family gatherings throughout Hubei province.
