Cultural Notes

Shacha sauce is a condiment unique to southern Fujian (Minnan), created from a blend of dried shrimp, dried fish, garlic, shallots, chilies, and numerous spices. It reflects the maritime trade connections between Fujian and Southeast Asia. Shacha noodles are the quintessential Minnan comfort food, especially popular in Xiamen and Zhangzhou.
