Jelly cake
Jílì Bǐng (Auspicious Cake) is a traditional Beijing festive pastry shaped like a caltrop, symbolizing good luck and prosperity. These golden, crispy deep-fried cakes are made from glutinous rice flour filled with sweet red bean paste, and are especially popular during the Lunar New Year and wedding celebrations.
Ingredients
- 250 g glutinous rice flour
- 100 g red bean paste
- 80 ml warm water
- Oil for deep-frying
- 1 tbsp sugar
Instructions
- 1. Knead flour and warm water into a soft dough and let it rise for 20 minutes.
- 2. Divide the dough into strips and roll it into a thin round dough.
- 3. Sprinkle the garnishes and a little salt on the dough
- 4. Roll up the dough and flatten it into a cake shape
- 5. Brush the pan with thin oil and fry over medium-low heat until one side is golden brown, flip over
- 6. Fry both sides until golden and crispy, remove from the pan and cut into pieces.
Cultural Notes
The name 'Jílì' means 'auspicious' or 'lucky' in Chinese, and the caltrop shape symbolizes continuous good fortune. This pastry has been a part of Beijing's festive food tradition for centuries, particularly during Spring Festival celebrations and joyous family occasions.
