Beijing Ludagun
Beijing rolling donkey is a traditional Beijing snack made from steamed glutinous rice dough rolled around a sweet red bean paste filling and coated in roasted soybean flour.
Ingredients
- Glutinous rice flour 200 g
- Red bean paste 150 g
- Soybean flour 50 g
Instructions
- 1. Soak the glutinous rice flour in warm water until soft (about 20 minutes), drain and set aside.
- 2. Boil water in a large pot, add noodles and cook until appropriate softness and hardness, take out
- 3. Prepare the sauce: mix the ingredients and stir well
- 4. Blanch the red bean paste and set aside.
- 5. Pour the noodles into a bowl, pour the sauce over it, add the side dishes and mix well.
Cultural Notes
Ludagun (rolling donkey) is one of the most iconic traditional snacks of old Beijing, dating back to the Qing dynasty. The name comes from the amusing visual resemblance to a donkey rolling in yellow dust (the soybean flour). This snack is found in every traditional Beijing snack shop and is especially popular during the Spring Festival. The contrast between the chewy glutinous rice, sweet bean paste, and nutty roasted soybean flour makes it an addictive treat.
