Bao Du
Bao Du is a traditional Beijing street food made from quickly blanched beef or lamb tripe, then dressed with sesame sauce, garlic, cilantro, and chili oil. The key is precise timing — the tripe must be blanched for just seconds to achieve the perfect crunchy-yet-tender texture.

- Fresh beef tripe 500 g
- Sesame paste 3 tbsp
- Chive flowers to taste
- Fermented bean curd 1 piece
- Chili oil 1 tbsp
- Coriander to taste
- Chopped scallions to taste
制作步骤
- 1. Wash and cut the fried belly, marinate with salt and cooking wine for 10 minutes
- 2. Coat with dry starch or batter
- 3. Pour enough oil into the pot and heat until 60% hot
- 4. Add fried tripe piece by piece and fry over medium heat until golden brown and take out
- 5. Increase the oil temperature to 80% and fry again for 30 seconds until crispy.
- 6. Remove and drain the oil, then serve on a plate
