Tingzi porridge
Tǐngzǎi Zhōu (Boat Congee) is a traditional Guangzhou rice porridge loaded with a colorful medley of toppings — sliced fish, shrimp, peanuts, sliced pork, fried dough (youtiao), egg threads, and scallions. Originating from the small food boats (tingzai) that once plied the Pearl River, it is a rich and hearty Cantonese comfort food.
食材清单
- 150 g jasmine rice
- 100 ml water
- 200 ml chicken stock
- 50 g fish fillet (sliced thin)
- 50 g shrimp (peeled)
- 50 g cooked lean pork (sliced)
- 2 tbsp peanuts
- 1 youtiao (fried dough stick, cut into pieces)
- 1 egg (beaten)
- Chopped scallions
- 1 tbsp ginger (julienned)
- 1 tsp salt
- White pepper to taste
制作步骤
- 1. Wash all ingredients thoroughly
- 2. Add enough water to the pot and bring to a boil over high heat
- 3. Add rice and main ingredients, bring to a boil over high heat and then reduce to low heat
- 4. Stir while cooking to prevent sticking to the bottom of the pot
- 5. Simmer over low heat for 40-60 minutes until the porridge becomes thick.
- 6. Add sugar or salt to taste and serve.
