Sweet and Sour Pork with Pineapple
Bōluó Gūlūròu (Sweet and Sour Pork with Pineapple) is one of the most iconic Cantonese dishes worldwide. Cubes of pork are battered and deep-fried until golden, then tossed in a glossy sweet-and-sour sauce with pineapple chunks, bell peppers, and cherries. The contrast of crispy pork and tangy fruit sauce is irresistible.
食材清单
- 400 g pork shoulder
- 200 g fresh pineapple
- 1/2 red bell pepper
- 1/2 green bell pepper
- 4 canned cherries
- Batter: 80 g cornstarch
- Batter: 40 g flour
- Batter: 1 egg
- Batter: 80 ml water
- Sauce: 3 tbsp ketchup
- Sauce: 3 tbsp sugar
- Sauce: 3 tbsp white vinegar
- Sauce: 1 tbsp light soy sauce
- Sauce: 1 tbsp cornstarch slurry
- Oil for deep frying
制作步骤
- 1. Marinate the pineapple sweet and sour pork with cooking wine and a little starch for 10 minutes
- 2. Heat oil in the pan, slide in the pineapple sweet and sour pork and stir-fry quickly until it changes color and serve.
- 3. Leave the oil in the pot and sauté the minced garlic and ginger until fragrant.
- 4. Add pineapple, onion, ginger and garlic and stir-fry until cooked
- 5. Pour back the pineapple sweet and sour pork, add in oyster sauce and light soy sauce and stir-fry quickly evenly
- 6. Thinly thicken the gravy, take it out of the pan and serve on a plate
