Winter Melon Pork Ribs Soup
Dōngguā Páigǔ Tāng (Winter Melon and Pork Rib Soup) is a classic Cantonese slow-simmered clear soup. Pork ribs are simmered with winter melon, ginger, and dried dates for hours, producing a naturally sweet, deeply nourishing broth that is believed to have cooling properties in traditional Chinese medicine.
食材清单
- 500 g pork ribs
- 500 g winter melon (peeled and cut into chunks)
- 20 g dried red dates
- 3 slices ginger
- 1 tbsp dried scallops (optional)
- Salt to taste
- 1500 ml water
制作步骤
- 1. Wash and process the winter melon
- 2. Add enough water to the pot, add winter melon and pork ribs soup and ginger slices
- 3. After the fire is boiled, skim off the foam.
- 4. Add the ribs, ginger and green onions and simmer over low heat for 1 hour
- 5. Add salt to taste
- 6. Serve in a bowl and sprinkle with chopped green onion.
