Chishui bamboo shoots
Chìshuǐ Zhúsǔn (Chishui Bamboo Shoots) features fresh bamboo shoots from Chishui, Guizhou, which is home to vast bamboo forests. The shoots are stir-fried with local chili and fermented ingredients, creating a dish that is crisp, slightly bitter, and deeply savory. Chishui's bamboo is considered among the finest in China.
食材清单
- 300 g fresh bamboo shoots
- 3 dried Guizhou chilies
- 2 cloves garlic (sliced)
- 1 tbsp fermented black beans
- 2 tbsp vegetable oil
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 tsp vinegar
- Sliced scallion for garnish
制作步骤
- 1. Cut the pork into thin slices or small pieces, add cooking wine and a little soy sauce and marinate for 15 minutes
- 2. Pour an appropriate amount of cooking oil into the pot and heat it over high heat until it is 70% hot.
- 3. Add the pork and stir-fry quickly over high heat until it changes color.
- 4. Add bamboo shoots and ginger and continue to stir-fry until raw
- 5. Add soy sauce to taste, stir-fry over high heat and serve evenly.
- 6. Remove from the pan and serve on a plate
