Qianxi smoked tofu
Qiánxī Xūn Dòufu is a traditional smoked tofu from Qianxi, Guizhou. Fresh tofu is slowly smoked over a mixture of tea leaves, rice hulls, and sugar cane, giving it a distinctive amber color and complex smoky flavor. The tofu is typically pan-fried and served with a spicy dipping sauce.
食材清单
- 400 g firm tofu
- Smoking mixture: 2 tbsp tea leaves, 2 tbsp rice hulls, 1 tbsp brown sugar
- Dipping sauce: 2 tbsp soy sauce, 1 tbsp chili oil, 1 tsp vinegar
- Dipping sauce: minced garlic, cilantro
- Oil for pan-frying
制作步骤
- 1. Wash the tofu, marinate with seasonings for 30 minutes
- 2. Line a baking sheet with tin foil and add Qianxi smoked tofu
- 3. Preheat the oven to 200 degrees
- 4. Place in the middle rack of the oven and bake for 20-25 minutes
- 5. Take it out halfway and brush it with a layer of marinade.
- 6. Bake until the surface is golden brown and then take it out of the oven
