Guizhou green bean fried meat
Guìzhōu Sìjìdòu Chǎoròu is a Guizhou-style stir-fry of green beans with minced pork. What makes it distinctively Guizhou is the generous use of sour chili (suan la jiao) — a local fermented chili condiment that gives the dish its signature tangy heat.
食材清单
- 300 g green beans (cut into 2 cm pieces)
- 100 g minced pork
- 2 tbsp Guizhou sour chili (suan la jiao)
- 3 cloves garlic (minced)
- 1 tbsp soy sauce
- 1 tbsp vegetable oil
- 1/2 tsp sugar
制作步骤
- 1. Cut the minced pork into thin slices or small pieces, add cooking wine and a little soy sauce and marinate for 15 minutes
- 2. Pour an appropriate amount of cooking oil into the pot and heat it over high heat until it is 70% hot.
- 3. Add the minced pork and stir-fry quickly over high heat until it changes color.
- 4. Add green beans, green onion, ginger and garlic and continue to stir-fry until cooked through
- 5. Add salt, soy sauce and cooking wine to taste, stir-fry over high heat and serve evenly.
- 6. Remove from the pan and serve on a plate
