Tóngrén Niúròu Fěn (Tongren Beef Rice Noodles) is a hearty noodle soup from Tongren, in eastern Guizhou. Slow-braised beef is served over fresh rice noodles in a rich, aromatic broth seasoned with local spices. The dish is topped with pickled vegetables, herbs, and chili oil, reflecting Guizhou's love for complex, layered flavors.

- 300 g beef brisket (cut into chunks)
- 300 g fresh rice noodles
- Broth: 2L water, 2 slices ginger, 1 star anise
- Broth: 3 tbsp soy sauce, 1 tbsp cooking wine
- Toppings: pickled mustard greens, cilantro, scallions
- Toppings: chili oil (to taste), 1 tsp Sichuan peppercorn oil

- 5. Mix the pasta and side dish seasonings evenly
- 6. Plate and serve
