Gannan fried fish
Gannan Stir-fried Fish is a traditional dish from the Gannan region of Jiangxi. Made with grass carp and stir-fried over high heat with chili peppers and garlic sprouts. The fish is tender and smooth with a tangy, spicy flavor that opens the appetite. It is a beloved home-style dish on Gannan dinner tables.

- Grass carp 1 (about 750 g)
- Green bell pepper 50 g
- Bird's eye chili 5 pcs
- Garlic shoots 50 g
- Ginger 15 g
- Garlic 15 g
- Cooking wine 15 ml
- Light soy sauce 15 ml
- Vinegar 10 ml
- Starch 10 g
- salt to taste

制作步骤
- Remove bones from grass carp and cut into thin slices with an inclined blade
- Marinate the fish fillets with cooking wine, salt and starch for 10 minutes
- Slice green peppers, cut garlic sprouts into sections, and slice ginger and garlic
- Heat oil in a pan until it is 60% hot, slide in the fish fillets and fry until they change color and serve.
- Leave the base oil in the pot and sauté the ginger, garlic and millet until fragrant
- Add green pepper slices and stir-fry
- Pour back the fish fillets and add light soy sauce and vinegar to taste
- Sprinkle in the garlic sprouts and stir-fry quickly.
