Gannan Stir-fried Fish is a traditional dish from the Gannan region of Jiangxi. Made with grass carp and stir-fried over high heat with chili peppers and garlic sprouts. The fish is tender and smooth with a tangy, spicy flavor that opens the appetite. It is a beloved home-style dish on Gannan dinner tables.

制作步骤

  1. Remove bones from grass carp and cut into thin slices with an inclined blade
  2. Marinate the fish fillets with cooking wine, salt and starch for 10 minutes
  3. Slice green peppers, cut garlic sprouts into sections, and slice ginger and garlic
  4. Heat oil in a pan until it is 60% hot, slide in the fish fillets and fry until they change color and serve.
  5. Leave the base oil in the pot and sauté the ginger, garlic and millet until fragrant
  6. Add green pepper slices and stir-fry
  7. Pour back the fish fillets and add light soy sauce and vinegar to taste
  8. Sprinkle in the garlic sprouts and stir-fry quickly.
