Shangrao roast chicken
Shangrao Roast Chicken is a signature dish from the Shangrao region of Jiangxi. Made from local free-range chicken that is marinated and slowly roasted over charcoal. The skin is golden and crispy while the meat is tender and juicy, with an irresistible aroma. It is a must-have dish for banquets and festivals in the Shangrao area.
食材清单
- Free-range chicken 1 (about 1.5 kg)
- Light soy sauce 40 ml
- Dark soy sauce 20 ml
- Cooking wine 30 ml
- Honey 30 g
- Five-spice powder 10 g
- Ginger 30 g
- Green onions 20 g
- Garlic 20 g
- Salt 10 g
制作步骤
- Clean the chicken and rub salt and five-spice powder inside and out
- Mix light soy sauce, dark soy sauce, cooking wine and honey into marinade
- Spread the marinade evenly on the inside and outside of the chicken
- Add ginger and garlic slices and marinate for more than 4 hours (overnight is better)
- Preheat oven to 180 degrees
- Place the chicken in a baking pan and brush with honey water
- Bake for 60 minutes, turning over halfway through and brushing with honey water
- Bake until the skin is golden brown and crispy
